Wondering about the DL off blocks. Is that a deficit DL with your feet on blocks, or is the weight set on blocks?

The weight is set on blocks. They can also be called rack pulls, or pin pulls. I prefer to use blocks to save the bar from being bent when you get up over 600 lbs.
